Happy Pi Day!
Ralph has robotics on St. Patrick’s Day this year (Go Team 1511) so we planned our St. Paddy’s corned beef reubens for tonight’s dinner.
Acknowledging that this is a first-world problem, I forgot that TODAY is Pi day and there is nothing I love more than planning pies, baking pies, and eating pies on 3/14. It’s actually one of those holidays that is unique and niche enough to want to celebrate.
So here I am, corned beef in the crockpot, wondering if I can take large muffin tins, line them with rye bread, and turn them into mini-reuben pies. Hear me out.
line buttered rye bread in a muffin tin (buttered side down)
layer of baby swiss
layer of shredded corned beef
layer of saurkraut (already mixed with dressing)
another layer of baby swiss (to act as melty glue)
top with buttered rye bread
Bake at 400*F for 15 minutes or until golden brown?
I have no idea if this will work, but I think it might be a fun Pi Day trial.
